Meat Operations and Management  has become very creative and sophisticated!  Trained meat cutters have several career options in the Culinary Arts and food industry.  SAIT has secured agreements with Calgary and Region supermarkets to pay your tuition and guarantee employment even before you graduate.

The retail meat trade is changing to incorporate added services that demands strong interpersonal skills between the butcher/meat cutter and their customers.  As a trained meat cutter you will be processing value added meat products and meat products that you see daily in the meat cases of supermarkets and butcher shops.

Baking and Pastry Arts

The Baking and Pastry Arts Diploma program is designed to fill the demand by industry for people trained in all areas of baking and patisserie.

The Baking and Pastry Arts program Offers

  • Two Year Diploma

  • Practicum

  • High Industry Demand

  • International Study Tours

You will learn everything from Artisan Bread and Pastry production to creating Sugar Show Pieces and Modern Desserts. In the first year of training, you will learn to create and produce breads, buns, and rolls using the natural sponge and sourdough methods, yeast-raised, sweet and savory products. Year one also includes an introduction to the decorative art and creative specialty (special occasion) cakes, flans, tortes, gateaux sheet cakes and squares.

In the second year of the Baking and Pastry Arts Diploma Program students are trained in the specialized production of pastry items and creative display pieces. You will learn everything from chocolate fundamentals, to creating elegant showpieces, wedding cakes and contemporary plate presentations.

Management skills including food regulations, customer service, costing, pricing, and merchandising are incorporated into the program preparing participants to assume supervisory roles or starting a business from scratch.
Students are required to dress and groom as exemplary models of industry expectations.

Transferability / Accreditation: Alberta Apprenticeship has accredited this course for 1140 hours, including all three technical training periods.

Career Opportunities: Graduates find work as bakers, bakery managers and pastry chefs.

Statistics: Employment rate 100%
